In this video, my son, Step, and I prepare a miso soup based on the traditional Japanese staple.
Made with fermented soy paste, miso soup is rich in isoflavones, which help protect against cancer and heart disease. The seaweed in miso soup contains compounds that can help lower blood pressure and cholesterol, and even help prevent various cancers. Not just for vegetarians, tofu brings additional calcium, protein and iron to the table. It’s important to use organic miso and tofu, as most conventionally grown soybeans in the U.S. contain GMOs. I like to add fresh garlic, ginger root and shitake mushrooms to my version of miso soup to give it even more immune system boosting power! Enjoy!
