Asparagus is a top healing food, in my book, for several reasons. First, it is a wonderful source of valuable antioxidants like glutathione and vitamin C, which we need to help protect us against aging and disease. As it contains alpha linoleic acid and folic acid, which help prevent hardening of the arteries, asparagus is cardio-protective. Asparagus is low-calorie and full of fiber, which we need for digestive health. It is also a low glycemic food, which means it doesn’t require much insulin for its digestion. Hence, eating it will not contribute to the development of type II diabetes and obesity. Bon appetit!
