In Part 1 of this breakfast series, I showed you my favorite breakfast ingredients with which to make three easy, light, tasty meals that are also healthy, and featured flaxseed muffins with oil. In this video, more clues emerge…I demonstrate how to to make a nutrient- and fiber-packed bowl of cold cereal using a medley of fresh berries, corn flakes, chia seeds, walnuts, almonds and coconut milk. This breakfast can help you get your day off to a fantastic start, but there are a few caveats:
- Use, whenever possible, organic berries – especially strawberries; according to the Environmental Working Group, strawberries are among the highest in pesticide content.
- Choose organic corn flakes. An estimated 85 percent of corn crops conventionally grown in the U.S. are genetically modified.
